Shakshuka (eggs in tomato sauce)


I knew shakshuka has to be delicious because I saw the recipe lots of times in books and blogs, everybody was cooking it. And let me tell you it is really delicious. It's not a fast breakfast, you should eat a small breakfast before and then take your time and cook this recipe, it's worth it!

Preparation time: 50 minutes

Ingredients:
  • 2 tbsp olive oil
  • 1x400g tin tomatoes
  • 1/2 red pepper, thinly sliced
  • 1/2 onion, thinly sliced
  • 1 garlic clove, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp chilli flakes
  • salt, pepper
  • 70 g feta, crumbled
  • 3 eggs
Method:
  • Preheat oil in a pan and add onion and pepper into the pan. 
  • Cook until soft, about 20 minutes.
  • Add garlic and continue cooking for 2 minutes.
  • Stir in cumin, paprika and chilli flakes and cook for 1 minute.
  • Pour in tomatoes, add salt and pepper and simmer until tomatoes have thickened, about 10 minutes
  • Stir in crumbled feta.
  • Crack eggs into the skillet over the tomatoes.
  • Season with salt and pepper
  • Put a lid over the skillet and continue cooking until the eggs have thickened, about 7 minutes.
  • Serve directly from the pan
