Shakshuka (eggs in tomato sauce)
I knew shakshuka has to be delicious because I saw the recipe lots of times in books and blogs, everybody was cooking it. And let me tell you it is really delicious. It's not a fast breakfast, you should eat a small breakfast before and then take your time and cook this recipe, it's worth it!

Ingredients:
- 2 tbsp olive oil
- 1x400g tin tomatoes
- 1/2 red pepper, thinly sliced
- 1/2 onion, thinly sliced
- 1 garlic clove, minced
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp chilli flakes
- salt, pepper
- 70 g feta, crumbled
- 3 eggs
Method:
- Preheat oil in a pan and add onion and pepper into the pan.
- Cook until soft, about 20 minutes.
- Add garlic and continue cooking for 2 minutes.
- Stir in cumin, paprika and chilli flakes and cook for 1 minute.
- Pour in tomatoes, add salt and pepper and simmer until tomatoes have thickened, about 10 minutes
- Stir in crumbled feta.
- Crack eggs into the skillet over the tomatoes.
- Season with salt and pepper
- Put a lid over the skillet and continue cooking until the eggs have thickened, about 7 minutes.
- Serve directly from the pan
