Blueberry cobbler


Well, it seems here it is blueberry season. It is very hard to know for sure when the season for what is because firstly they don't have a season for lots of stuff here and secondly even the things they have seasons for are delayed to the seasons I used to know.
Nevertheless, I don't know if I mentioned a thousand times that cobblers, crisps and crumbles are the best way to make ripe fruit shine. All of them are practically baked fruit with something doughy on top.
This blueberry cobbler is really delicious and you should definitely try it, even though at first the idea just to bake some fruit sounds boring(it really sounded boring to me until I tried my first apple crumble and was hooked). My picture where 3/4 of the cobbler is missing is proof that it is too good to wait for a picture.

Ingredients:
  • 375 g blueberries 
  • 1 orange (zest and juice) 
  • 9 g vanilla sugar 
  • 75 g butter 
  • 75 g sugar 
  • 100 g flour 
  • ½ tsp baking powder 
  • ¼ tsp salt 
  • 1 egg 
  • 2 tsp maple syrup 
  • vanilla ice cream for serving 
Method:
  • Zest orange and set aside. Transfer blueberries to a pie plate and juice the zested orange directly over the blueberries. Add vanilla sugar and toss to combine.
  • Preheat oven to 200°C. Cut butter into cubes and add to a large bowl with orange zest. Add sugar, flour, baking powder, and salt to the same bowl, and mix with fingertips until small crumbs form. Add the egg and maple syrup, and mix with a cooking spoon.
  • Distribute large spoonfuls of the batter evenly over the blueberries, but leave some space so that the blueberries are not completely covered. Bake the cobbler at 200°C/390°F for approx. 45 min., or until the top is golden brown. Remove from the oven and let cool for approx. 15 min. Serve with vanilla ice cream. Enjoy!
