Quarantine diary entry 1. - breakfast for dinner
This virus stuff made me realise that my life before lock-down was not so different from my life during lock-down, so I guess I am doing well in self-isolation. I didn't even start to talk to myself, I am talking here to my imaginary readers.
What annoys me the most as an eater who always wants to eat everything except the stuff which I have, is that I cannot go to the supermarket whenever I want. So at night, before going to bed, I start dreaming of carrot cakes(darn I don't have any carrots), or lush cupcakes with cream cheese frosting(I don't have so many things and how could I eat 12 cupcakes by myself without getting diabetes), chinese noodels(I could try, but they never taste so good like the ones from the chinese take-out) or pizza(no biggie here, besides the fact that it's not so healthy to eat so many pizzas).
And did anybody notice that your feet are always cold in home-office so you try different solutions to keep them from freezing(my current solution is sport socks as an insulating base layer followed by thick wool socks on top for additional warmth and comfy-ness).
Anyways, other annoying stuff is the meal planning. I love to cook as long as I don't have to do it everyday 3 times with only ingredients I have in the house because going out is a big NO NO. If I have to do that I am not amused anymore. And at some point after eating all the beans and tuna and pasta in the world I sure wish there would be some astronaut food pills available, you just take one, drink some water afterwards, and eating problem solved.
One of the fastest solutions for eating during home-office hours is breakfast for dinner. And by this I mean you just do some eggs in some way and eat them and that's that. Of course in order to do this you have to skip the eggs and only eat cereals for breakfast(I know, life is hard).
So this is the perfect time for you to get some mad egg skills.
Of course everybody should already master the basics, but if you don't here are some ideas:
- boiled eggs - with avocado toast and feta cheese for example
- scrambled eggs - ok this photo was never meant to be in here - you could try indian-style scrambled eggs - in a pan fry 1/2 chopped onion until it is soft. Add 1 minced garlic clove and fry for another minute. Add 2 chopped plum tomatoes(small tomatoes or 1 medium tomato) on top and fry until there is no juice anymore in the pan. Add 4 eggs on top and scramble. You could also add some spices like chilli powder.
- omelettes - I love omelletes with leeks, olives and feta. If you never tried to fry leeks and eat them with stuff, now is the time! Just chop and fry half a leek in a pan, take it out. Then make an omellete and fill it with the leeks, some chopped olives and some feta cheese. Yum! I added also some mushrooms because I still had some left and didn't know what to do with them.
- now is the time to learn how to poach an egg - it's a fun project and usually has a delicious result - try for example this turkish cilbir recipe which is basically poached eggs with yogurt.
- shakshuka - another version of poached eggs in tomato sauce - if you never tried it just stop everything you are doing and try it now! I love it!!
- fried eggs - try mexican huevos rancheros - fried eggs with tomatoes and beans(ok, this has lots of ingredients and probably is not so fast so maybe do it when you are bored and have enough time)
- frittata - don't even know how to describe a frittata - baked eggs and vegetables? a thicker version of an omelette? - maybe try this recipe with sweet potatoes and blue cheese from here
- and as a bonus - I am intrigued by this recipe of persian eggs with dates so I am going to check this out as soon as I have some dates.
